Potato and Kielbasa night!
Food your going to need:
potatos
cheese
Salsa
veggie(bell pepper, onions and broccoli)
Kielbasa
Ok so all I do it slice up the kielbasa in half inch slices and "fry" up in a non stick pan. I also do up the veggies(onion, bell peppers, Broccoli) in the same pan after about five mins.
Then I microwave up the potato's. they take about five mins per med potato. remember to poke the skin a few times if your going to microwave them. I slice the top of potato and sqeeze it open then top all the fixins to the potato and then you can add cheese and or salsa.
So yummy! ENJOY!

We LOVE Curry!
CURRY-
Food you will need:
Rice(brown is what I use)
Chicken(2 -4)
Curry
Broccoli
the Bell Peppers and onion
I like to marinade chicken over night or at least in the morning. With the yellow curry(lots, like 4Tbsl or well coated, oil 1Tbsl, and I add cumin 1Tbls, garlic salt 1Tbls.
I like to brown up my chicken when I cook it.
Cook Rice pre directions.
Steam Broccoli, I like to stir fry bell peppers and onions with some soy.
Serve up on a plate in a pile which is how we do it.
Enjoy!

Grilled Pizza
You will need:
Pizza dough I like the kind of from Sprouts which is in the frozen section( if you buy it from Sprouts you will need to let it sit out for a few hours to thaws out. or the fresh from Trader Joe's. you can also use flat bread, lavash wraps bread.
BBQ sauce we like Master Piece Mesquite. but use your fav.
Chicken I just season it with garlic salt and pepper. 2 pieces
Cheese 16 oz.
chicken Sausage(optional, my hubby like's his meat)
Cilantro
Procedure with caution it's really good!!!
Step one -We cook the chicken on the grill so the grill is all ready heated up.
I roll out dough, one pre-bought makes two pizza. roll it out to about 1/4 thick.
*HINT you will be putting the pizza directly onto the grill so you have to put the dough onto a metal flat cooking sheet. when you do this you need to use corn meal on the metal/paddle use ALOT of it so that it comes off easy.
Next step- I put a little BBQ on the bottom instead of pizza sauce, then mix shredded chicken with a little BBQ sauce. Add to pizza, add cook sausage, cheese and Cilantro on top. that's done and ready for the grill!
*note one pizza at time until you can fit two at one time. Also don't let the pizzas sit to long it will be harder to move off the cooking sheet.
You are going to slide the pizza on the cooking sheet to make sure it moves.
Next, slide it onto the grill. Close the grill lid. it will cook for about 6-8 mins. the top with be melted but not browned all that much, check the bottom of pizza to look for a golden brown crust, that's when it's done.
ENJOY!!! I'm so looking forward to eat dinner tonight.

Eggplant sooooo YUMMY!!!!
Who likes Eggplant?
We buy the Eggplant cutlets from Trader Joes. they are frozen, healthy and so easy.
I cook eggplant in a skillet with Pam. I do usually brown it with olive oil for my hubby.
Cook Angel hair pasta to desired likeness.
Warm pasta sauce
steam Broccoli.
then put it all together. I like to put pasta, broccoli, eggplant then sauce on top. and don't for get a lil Parmesan on top. YUMMY!

Yippee it's Wednesday!
Mexican Food
Food needed:
Meat(chicken breast, ground turkey, chicken or beef)
Green Enchilada sauce
Spinach
Cheese
Rice
Tomato sauce
Black Beans
Mexican Spices, for meat and Rice.6-8 Tbls.

Cook up chicken/meats with the Mexican spices. do that first.
Ground Chicken, Turkey or Beef. Brown it all up before hand.
Procedure Enchilada Casserole
Get your glass dish out(9x13), put about a 1/4 cup of sauce on the bottom of dish. and now layering starts.
Put a layer of tortillas on the bottom, 1/4 of the meat, then cheese , add spinach, then a layer of tortillas, add sauce to lightly cover tortillas. then start again. should have 3-4 layers. end with tortillas on top then add cheese. Cook at 375 for about 25mins. or until desired browness:)
Rice:
lightly brown up 1 cup of rice first in a splash of oil, then add onion, and spices. Cook for a few mins. Then add tomato sauce and about 1/2 cup of water. Bring to boil. Cover and let cook over med for 10-15 mins. Test and see if done, if not add a few Tbls of water and let cook for a five more mins.
Then heat up your black beans.
ENJOY!
